Apple pie + cheesecake + cookies = the ultimate fall dessert trio. These irresistible cookies are perfectly spiced, creamy, and gooey perfection in every bite!
I made them with @zulkasugar ‘s pure cane sugar, which is organic, non-GMO, bone-char free, and totally vegan (not all sugar is!) Their sugars are less processed and have a subtle touch of molasses, which adds a delicious flavor to any recipe. You can now find @zulkasugar at @costco!
Cookies
- ⅔ cup vegan butter (150g)
- ½ cup Zulka Pure Cane Sugar (100g)
- ½ cup brown sugar (100g)
- 1 tbsp cornstarch
- 2 tbsp dairy-free milk
- 2 tsp vanilla
- ¼ tsp vinegar
- 1 ¼ cups + 2 tbsp all-purpose flour (215g)
- ½ tsp baking soda
- ¼ tsp baking powder
- ¼ tsp salt
Cheesecake
- 220g vegan heavy whipping cream
- 70g vegan cream cheese
- 1 tbsp powdered sugar
- 1 tsp vanilla
Apple Pie
- 3 apples (140g)
- 1/4 cup pecans
- 1/4 cup brown sugar
- 2 tsp vegan butter
- 1/4 tsp cinnamon
- 1 tbsp cornstarch
Directions
- In a large bowl, mix the cookie ingredients.
- Use a cookie scoop to scoop out the dough onto a cookie sheet. You should get 12 cookies. Refrigerate the dough for 30 minutes. Preheat the oven to 350°F/175°C.
- Add the heavy whipping cream to a stand mixer and whip until stiff peaks form. Add the cream cheese, powdered sugar, and vanilla & mix until the mixture is smooth and creamy. Place in the fridge.
- Wash, peel, and chop your apples into small cubes. Chop the pecans. Add the apples, pecans, brown sugar, butter, cinnamon & salt to a pan over medium heat. Stir often and cook for 10 mins until the apples are softened & caramelized.
- Finally, add the cornstarch and use a whisk to break up the clumps. Cook for a few minutes until the mixture thickens. Remove from the heat, transfer to a heat-safe dish, and place in the fridge to cool.
- Bake the cookies for 12 minutes.
- Once the cookies and apple toppings have fully cooled, add a generous dollop of the cheesecake mixture and spread on each cookie. Then top with the apple pie topping. Use the extra caramel that has formed from cooking the apples to top the cookies.
- Enjoy! Store in the fridge.
