Tiramisu + brownies = one of my favorite desserts I’ve ever made. Rich, coffee-infused fudgy brownies topped with a creamy, cloud-like layer & finished with cocoa.
For that perfect crinkly brownie top, I used @zulkasugar’s pure cane sugar, & for the light, fluffy, melt-in-your-mouth cream, I used their powdered sugar. All of Zulka’s sugars are organic, less-processed, non-GMO, & 100% vegan.
Brownie Ingredients
- 1/2 cup (120g) aquafaba*
- 1 cup (200g) Zulka Pure Cane Sugar
- 100g dark chocolate
- 1/4 cup (25g) cocoa powder
- 2 tbsp espresso powder
- 1/4 cup (56g) room temp vegan butter
- 2 tsp vanilla
- 1/8 tsp salt
- 1 cup (120g) all-purpose flour
Creamy Layer
- 1 cup (250ml) vegan heavy whipping cream
- 1/4 cup Zulka Powdered Sugar
- 1/2 tsp vanilla bean paste
- 1/4 cup vegan cream cheese
- pinch of salt
Also
- a generous layer of cocoa powder to top
- a cup of espresso
Note:
aquafaba is the liquid from a can of chickpeas.
Directions
- Start by mixing the aquafaba & sugar & whisking vigorously for ~ five minutes, until the sugar dissolves into the aquafaba. I recommend using an electric mixer.
- Melt the chocolate, then add it to the rest of the ingredients along with the cocoa powder, espresso, butter, vanilla, salt, & whisk.
- Gently fold in the flour, being careful not to overmix.
- Line a baking dish with parchment paper & transfer the brownie batter to it. Bake the brownie at 350°F/175°C for 30-40 minutes, until a toothpick comes out flightly choclatey, but not wet.
- Note: if you use a larger baking dish, the baking time will be less, so keep an eye on your brownie!
- Once done baking, allow the brownie to fully cool before adding the cream.
- Using a toothpick, poke some holes all over the brownie. Use a teaspoon to pour little bits of espresso on top of the brownie.
- Add the whipping cream to a bowl & whip for several minutes until it thickens. I recommend using an electric mixer. Add the sugar, vanilla, & salt, & beat until stiff peaks form. Fold in the room-temp vegan cream cheese.
- Spread the cream on top of the brownie & use a spatula to create an even layer. Dust a generous layer of cocoa powder on top.
